Pansit Batil Patung

Each time that I come back home to Tuguegarao City, I won't miss to look for the best tasting pansit batil patung (no, I haven't misspelled any word for it) - a local pride where the pansitan are as numerous as the traysikol (hehehe) plying Metro Tuguegarao.

For the uninitiated, this famous pansit batil patung is coined from the additional savory beaten (batil) egg soup and another sunny-side up egg as a finishing garnish on top (patung) of the mound of pansit. Sorry, but their spelling is patung, not the patong for the Tagalog speakers.The
Ybanags have this strong, 'hard' twang that patong became patung.

The pansit (noodle) is locally done. In fact, many pansitan have their own way of making the noodles. Depending on the pansitan, the noodles may differ in taste, texture, color, and flavor from one pansitan to the next.

Each pansitan carefully guards its secrets so that the others could not copy the distinct flavor and aroma.

The cook is the ultimate defining factor on how savory the pansit is. First, there was this legendary Budyok who started experimenting how to make the ordinary pansit into a culinary novelty. Then there was Tuddao's which added more liver into the concoction. Then others followed suit experimenting on other ways of preparing the Tuguegarao culinary discovery. Now, wherever the best cook is, the best judges would be the traysikol drivers who are the regular customers of pansit batil patung.

But in general, the entire culinary masterpiece is garnished with ground meat (pork or beef), finely chopped liver, plenty of chopped onions, a dash of green onions, sili (if you wish), and savory toyo. The soy sauce is locally produced. The pansit batil patung tastes heavenly, so to speak.

Perhaps all genuine Tuguegarao residents love this culinary discovery.

And I would come back again and again to Tuguegarao City to scout for the next pansitan to savor the aroma and taste of pansit batil patung. I tried Dok's. I went twice to Claire's. I went once to ECL near DepED. Perhaps next time, there will be another hit place for the tasty pansit batil patung.

Nakakamiss. no mattar how hard i try, i cant cook a pancit batil patung myself.

Try also the following panciterias:
Long LIfe - at Tanza
another one at corner bartolome st an national highway (west of basketball court)
Lamuds in cataggamman for old school pancit batil patung
There's one in annafuna (medyo looban) they serve it with chorizo but i dont like the chorizo part.
Ugac higway Panciteria was once good but i guess the flavor changed when the macho gay cook was replaced by manag. still delicious though.

On my next trip home, hanap pa ng iba pang panciteria hehehehe. May bago daw sa mga carwas sa diversion road.

natabunan ng pansit. pero meron talaga siyang sunny side up na itlog. hehe. sa iba, estrellado ang tawag.

im taking advantage of this rare ipportunity to post an add for my own pansitan. will it be fine? please allow me. its been open for almost a month now BAGUMBAYAN PANSITERIA located of course in bagumbayan 1 block away fr CAP pensionee and FCI mall. The chef is yours truly, a homemaker and a mum of a adorable 1yr 8mos baby girl. Cant forgo looking after my child that's why i thought of cooking Pansit in the comfort of our own home. How would you like to try our enticingly delicious pansit for less! Soy and Broth based tuguegarao noodles topped with sauted carabeef, bagnet,pork liver,monggo sprouts & pouched egg.Typically served w/ piping hot egg soup & spicy toyo-mansi w/onions. im quite envious about your sumptuous experience with " pancit batil patung"... when my friends and i had a short vacation their in Tuguegarao, we din't miss the chance to savor this stuff they say " nasingo"- delicious pancit. we headed to one panciteria and it was indeed like eating in a world class restaurant. couple of days later, we tried diff panciteria and some toppings were kinda new but the taste was like wheeeeeeeewwwww..really delicious... im a missionary originally from sycacuse NJ.. i just wish someone could teach me how to cook this original FIlipino Food...someone propped up with me cooking but it turned like shit when i did my own job..huh
